I have been trying out lots of different recipes and it has been really fun. For the most part, my boys have really enjoyed it as well. Here are a few of my faves that I have tried.
A one pan meal is always a great idea when you want clean up to be a snap. This
Hasselback Caprese Chicken was a hit! I did make a few changes to the published recipe. I I doubled the recipe because I wanted to have leftovers for lunch. My son didn't want tomatoes in his chicken so you can see in the picture his only has mozzarella. I added a few cut up potatoes to the veggie side because I had them on hand and needed to use them. I also had some spinach on hand that needed to be eaten so I cooked it with the chicken. The spinach completely wilted during the cooking process but gave another punch of greens to this recipe without taking away from the great flavor. This recipe is from Eating Well. It is a great resource for all sorts of recipes.
The sweet that received a huge thumbs up were these Pumpkin Cream Cheese muffins from The Girl Who Ate Everything. These were devoured! A little sinful for breakfast but we just couldn't help ourselves!
I also wanted to try some new, hearty sides. My boys like carbs and potatoes and I needed a new option rather than my regular go to. This Potato Artichoke Gratin from Eating Well was fantastic and slipped in some new flavors for potatoes. The recipe makes 12-16 servings so this would make a great side when family is in town.
And if you need a good hearty, crock pot recipe for cold weather, this Shrimp and Sausage Gumbo from Chowhound packs all the flavor. Adjust the spice depending on how spicy you like your gumbo. This is definitely a winner with the guys!
