Homemade Tomato Sauce


2-3 pounds Roma tomatoes

2 tbsp olive oil

1 tbsp minced garlic

2 tbsp oregano

2 tsp salt

6 ounce can tomato paste

28 ounce can plum tomatoes, drained

1. Chop the fresh Roma tomatoes, discarding tops and bottoms. Drain and press with paper towels to remove excess water.

2. In a 2.5 quart pot, heat olive oil over medium heat and saute the garlic for about 5 minutes. Add the chopped tomatoes, oregano, salt, tomato paste, and plum tomatoes. Stir well and bring to a simmer.

3. Lower heat to simmer low, cover, and simmer 4-5 hours, stirring occasionally.
