Ginger Pork and Snow Pea Stir-Fry

This healthy and easy supper recipe is one I found in Diabetic Living. (I have slightly tweaked it) They have lots of great recipes that are well balanced with carbs and protein. Serve it over rice or quinoa. If you want to add some kick, sprinkle with crushed red pepper when you add the ginger at the end.


1 Tbsp Olive Oil

1 medium onion, sliced

8 ounce boneless pork loin, cut into bite size strips

1 cup thinly sliced carrots

1 1/2 cups fresh snow pea pods

1 Tbsp sesame seeds

2 Tbsp soy sauce

1 Tbsp freshly grated ginger

1 Tsp toasted sesame oil

1. In a wok, heat olive oil over medium high heat. Add onion, cook and stir about 2 minutes. 2. Add pork and carrots, cook and stir about 2 minutes.

3. Add pea pods and sesame seeds, cook and stir about 3 minutes.

4. Add soy sauce, ginger, and sesame oil, cook and stir 1 minute.

Makes 3-4 servings
